From Katie’s Kitchen ♡
Some breakfasts are meant to be quick and simple. Others are meant to make you very happy when you open the fridge and remember there’s a delicious breakfast already waiting for you. This one is definitely the second kind. 😂
Loaded with savory bratwurst, crispy bacon, cheddar cheese, onion, and garlic, this hearty casserole became a keeper in my breakfast meal-prep rotation. It’s cozy, satisfying, and exactly the kind of breakfast I love having ready for a busy morning.

Yield: Approximately 8–10 servings · Baking dish: 11×13 inches · Bake: 350°F for 45 minutes
What You’ll Need
- 10 bratwurst sausages (two 5-count packages), casings removed if needed
- 15 large eggs
- 1 package (12 oz) thick-cut bacon
- 1 whole onion, chopped
- About 3 cups shredded cheddar cheese
- ¼ cup heavy cream
- About 1 tablespoon minced garlic
- Black pepper, garlic powder, and onion powder, to taste (no added salt—the bacon brings plenty of saltiness)
How to Make It
- Prepare the oven and dish. As a starting point, preheat to 350°F and grease an 11×13-inch baking dish.
- Cook the meats. Brown and fully cook the bratwurst, breaking it into bite-size pieces. Cook the bacon until crisp, then chop or crumble it. Drain excess grease.
- Cook the aromatics. Sauté the chopped onion until tender and add the minced garlic briefly at the end.
- Whisk the eggs. Beat together the 15 eggs and heavy cream, then add black pepper, garlic powder, and onion powder to taste. No additional salt is needed because of the bacon.
- Assemble. Spread the cooked meats, onion, garlic, and cheddar in the prepared 11×13-inch baking dish. Pour over the egg mixture and distribute evenly.
- Bake until set. Bake at 350°F for approximately 45 minutes, until the center is set and reaches 160°F.
- Rest and serve. Let stand briefly before slicing. Refrigerate leftovers promptly for easy breakfasts during the week.
A Little Note from My Kitchen
This is one of those hearty breakfasts that makes meal prep feel like a treat. The combination of bacon, bratwurst, eggs, and plenty of cheese is filling enough to carry you through a busy morning. And yes, I’m absolutely the kind of person who gets excited about finding a really good make-ahead breakfast. ♡
