❧ A Little Clearance Magic: My Marinated Italian Antipasto Salad ♡ ❧

Marinated Mozzarella and Salami Salad, with the clearance-priced mozzarella and salami, and the full recipe title visible

Sometimes the best recipes happen when you’re not even planning on making them.

I was grocery shopping at Kroger, doing my usual thing and looking for good deals, when I came across a few clearance stickers I just couldn’t ignore. 😂

First, I found Sugardale diced hard salami for $1.05 a package. I grabbed four! I used one for this recipe and put the other three in the freezer. Then I spotted BelGioioso fresh mozzarella pearls marinated in chili peppers and garlic for $2.80 a container. Naturally, two came home with me.

I already had some colorful tomatoes in the fridge and an extra package of plain mozzarella pearls, so I figured I’d throw everything together and see what happened.

Spoiler alert: it was delicious. ❤️

No cooking required • Easy make-ahead lunch or snack • Season to taste

❧ Ingredients ❧

  • 2 containers BelGioioso mozzarella pearls marinated in chili peppers and garlic, with all of their marinade
  • 1 package plain mozzarella pearls
  • 1 package Sugardale diced hard salami (8 oz)
  • Red and yellow cherry tomatoes, halved or chopped, to taste
  • Garlic powder, onion powder and Italian seasoning, to taste
  • A little black pepper

❧ Directions ❧

  1. Empty both containers of marinated mozzarella into a bowl, including their flavorful oil marinade.
  2. Add the plain mozzarella pearls, tomatoes and diced salami.
  3. Sprinkle with garlic powder, onion powder, Italian seasoning and a little black pepper.
  4. Stir gently until everything is coated. Chill and serve.

Katie’s clearance find: The marinated mozzarella was $2.80 each (2 for $5.60), and the salami was $1.05 — just $6.65 for those sale ingredients, not including the extra plain mozzarella and tomatoes already on hand.

Storage: Keep covered in the refrigerator and eat within 3–4 days, provided the ingredients are fresh and within their use-by dates.

❧ Now, about those clearance stickers… ❧

Two containers of marinated mozzarella cost $5.60 total, and the salami I used was $1.05. That’s $6.65 for those three ingredients! I did use the extra plain mozzarella too, but the tomatoes were already hanging out in my refrigerator waiting to be used.

And I still have three packages of that bargain salami tucked away in the freezer for another meal. That’s my kind of grocery shopping. 😂

❧ A few little notes ❧

This is the kind of recipe you can change depending on what you’ve got. Olives, bell peppers or a little red onion would be delicious. It’s great for a quick lunch, alongside crackers, or tucked into a wrap.

Keep it refrigerated and aim to enjoy it within three to four days.

Sometimes all it takes is a few yellow clearance stickers and a little creativity in the kitchen. Happy bargain hunting! ❤️
