❧ A Cozy Bowl of Homemade Comfort ♡ ❧
Sometimes the best dinners are the ones you just throw into the crockpot and hope for the best. 😂 This ham and vegetable soup turned out so good that it earned a spot in my recipe box!
I used a bone-in ham steak, chopped up the meat, and tossed the bone right into the slow cooker for extra flavor. A little beef broth, a little chicken broth, plenty of garlic and seasonings, and a few vegetables later, we had a cozy, savory soup that tasted like it had been fussed over all day. (It hadn’t. That’s the beauty of the crockpot!)
One little trick I’m definitely keeping: cook the rotini separately. Spoon the noodles into each bowl and ladle the soup over the top. That way, the pasta doesn’t sit in the broth and get mushy when you save leftovers for another day.
♡ Ingredients
- 1 bone-in ham steak, meat chopped into bite-size pieces (reserve the bone)
- About 2 cups carrots, sliced
- About 1 cup celery, chopped
- 1 whole onion, chopped
- 1 cup beef broth
- 2 cups chicken broth
- 2 teaspoons minced garlic
- Garlic powder, to taste
- Onion powder, to taste
- A small amount of garlic salt
- Black pepper, to taste
- Italian seasoning, to taste
- A small pinch of cayenne pepper
- Rotini pasta, cooked separately (amount according to how many bowls you’re serving)
♡ Directions
- Cut the ham steak into bite-size pieces, keeping the bone.
- Add the ham, ham bone, carrots, celery, onion, minced garlic, beef broth, and chicken broth to the slow cooker.
- Season with garlic powder, onion powder, a little garlic salt, black pepper, Italian seasoning, and a small pinch of cayenne.
- Cover and cook on HIGH for 5 hours, then turn to LOW for 1 more hour.
- Remove the ham bone and check carefully for any small bone fragments.
- Cook the rotini separately according to the package directions. Add some noodles to each bowl, then ladle the hot soup over them.
- Enjoy!
♡ A Little Kitchen Note
The ham bone and the combination of beef and chicken broth give this soup a lovely, rich, savory flavor.
Leftover tip: Store the noodles separately from the soup in the refrigerator. Reheat each portion and combine them when you’re ready to eat. Just be sure to refrigerate leftovers promptly.
Made with love (and a little bit of whatever was in the kitchen). ♡
